Blueberry squares

Very simple but delicious.

375 degrees

3 cups flour
1 1/2 C sugar
1 Tbs baking powder
Mix together then add
2 sticks butter
Using a pastry blender cut the butter into the dry mixture until it has a sandy consistency.

In a small bowl beat 2 eggs and 1 tsp vanilla.
Add to dry mixture and continue with pastry blender until well incorporated.

Place 1/2 the mixture on bottom of 9 x 13 glass baking dish.  Press down firmly.

Layer with fresh blueberries or can of blueberry pie filling (fresh berries are always better not always an option).  Spread remaining dry mixture over blueberries.  Gently press down.

Bake 30-40 minutes or until golden brown, remove and cool completely.

When cool top with glaze in lattice pattern.
1 1/2 C Conf sugar
1 Tbs melted butter
2 tsp fresh lemon juice
1 Tbs water
Mix well, place in small ziploc bag, snip off corner and glaze.

Cut in squares and enjoy!
 

Cherry Oatmeal Cookies


Oven temp 350 degrees

In medium bowl:

1 1/2 C flour
1 1/2 C Old fashioned oats (not quick oats)
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
Mix together and set aside

Chop 1 cup of dried cherries, set aside


In stand mixer:
2 Sticks unsalted butter
3/4 C sugar
3/4 C Dark Brown sugar
1 egg
1 tsp vanilla
Cream together until light in color and very smooth.
On low speed (without creating a flour storm) add dry ingredients slowly, then add cherries

On parchment lined cookie sheets:
Using 1 1/2 inch scoop (smaller than an ice cream scoop) drop dough on cookie sheet then flatten slightly.
Do not crowd the sheet, cookies will spread while cooking.

Bake for 7-8 minutes
